PORK STEW CARIBBEAN STYLE

Pork Stew Caribbean Style

 

Ingredients List:
Tablespoon Virgin Olive Oil
2 Small Cloves of Garlic
½ Small Onion
1 Potato
1 small Caribbean white sweet potato (optional)
½ lb pork
½ tsp Ginger
½ tsp cumin
Package Sazon or Paprika (for coloring of the gravy)
thin slice scotch bonnet hot pepper
½ can Garbanzo beans ( use whole can if skip the sweet potato) Chickpeas
½ can chicken broth
½ can tomatoes

Method:
Blanch the potatoes by cubing to ¾ inch putting in the pot with a teaspoon of water and running 10 cups of water to the coffee maker and let drip through onto the potatoes. Let stay on the hot plate for 15 minutes then discard the salty water and place potatoes in a bowl.
Add oil, chopped garlic, diced onion to the pot along with the ginger and heat on hotplate until glazed
Add the pork and stir until it turns gray on all sides.
Add  all spices and mix. Then add the potatoes, garbanzos, tomatoes in layers and add the broth.
 If a thicker sauce is desired about an hour before serving pour some broth into a cup and stir in a teaspoon of cornstarch or flower then add it back to the pot and completely stir the pot.

CARIBBEAN STYLE TURKEY STEW

Caribbean Style Turkey Stew

 

Recipe:
1 Potato cubed and blanched
1 Tablespoon Olive Oil
1 rough cut Onion
2 cloves Garlic minced
1 thin slice scotch bonnet pepper
2 stalks celery diced
1 package Goya Sazon
5 oz sliced turkey leg
1-2 oz Cruzan Rum and 1-2 oz of water for moisture to steam the meat and vegetables
½ Tsp salt or as needed

 First cubed potatoes and salt are put in the coffeepot and water passed through the coffeemaker to blanch the potatoes remove from heat in 25 minutes, drain and set aside. Meanwhile prepare the rest of the vegetable.
 Put all the uncooked vegetables and spices in the pot.
 Place the partially cooked potatoes on top.
 Put 4oz water in the pot, cover with foil and return to the coffeemaker hotplate to cook the meat and vegetables for bout 6-8 hours.
 Remove the foil.
 This meal can be served from a bowl American Style or over a bed of Rice to extend it.
